I am so excited to announce that I am certified in Plant Based Nutrition from the T. Colin Campbell Center for Nutrition, Cornell University. I completed the course back in November of 2023. It was the best investment I made in myself in a long time. I was so engaged in the subject that I finished the certification early and received the highest score possible. I have been on a plant based/vegan diet for 35 years. Yup, I did it before it became a catch phrase. It was difficult back then to go to dinners and restaurants. There wasn’t much on the menu that wasn’t smothered in meat or dairy. I would usually eat a healthy meal before I went out to eat with friends because I knew when I arrived at the restaurant there would only be a subpar salad and french fires for my options. Both friends and family thought it was an odd food choice I made. I became vegetarian then totally plant based because I love animals and didn’t want to eat them. Once I learned that it was healthier not to eat meat or any animal proteins, I gladly eliminated them from my diet completely. People would ask me, “How do you get your protein?” I would respond, “The same way the animal that you’re eating for protein got it! From plants! I would tell them that cows don’t eat meat and they are full of protein and can grow pretty big and strong. Same with a gorilla, big, strong and powerful on a mostly plant based diet with a few insects, maybe a lizard now and then. Even Jesus didn’t eat meat! There are no references in the Bible to Jesus eating any meat. His brother James was raised vegetarian according to historians. God even speaks through animals! Noah didn’t go around collecting animals two by two. God spoke to them and they went to Noah before the flood. This could be hard to swallow for carnivorous Christians but they need to know. I will be posting later about the protein myth in established nutrition. I will also post my responses to people’s reasoning as to why they can’t give up animal products. I will mention now that the WHO (World Health Organization) has listed processed meats as a carcinogen. Though all animal proteins increases your risk of cancer greatly the WHO didn’t want to rock the boat by listing all animal proteins as carcinogens. The meat and dairy industry is big and powerfully funded… If you eat a Whole Food Plant Based Diet (WFPBD) you will get all the protein you need for healthy growth. If you stick to the SAD (Standard American Diet) you open yourself up to chronic diseases which then are treated by the “local theory of disease” (surgery and pharmaceuticals) as opposed to a “constitutional” way of understanding disease. The US and Australia are at the top of meat consumption per capita in the world according to UN Food and Agriculture Organization. The US is 5th in the highest cancer rate and Australia is 1st. Nutrition and lifestyle are areas of life were we do have the most power to contribute to our health. How flexible are you with your diet and lifestyle?
